Kelley's Fiesta Dip

This is another delicious recipe that is part of my review of Gooseberry Patch's Simple Shortcut Recipes
I made a half a batch of this dip, since there would only be two of us eating it.  I served it on some nachos on Thursday, ate it as a snack on Friday night and for lunch on Saturday.  It was delicious plain and on nachos.  I also think it would be good in a quesadilla or in a chicken enchilada.  Between the two of us, we finished it off in no time.  I guess you could say it was a hit with us!

It is super easy to throw together and it makes a lot, so it's the perfect dip to serve at a party.  The best part is you can make it a few days ahead of time, so no stressing last minute.  The recipe says to chill for at least 24 hours before serving, but I did eat some immediately after it was made and it tasted amazing.  The only difference I noticed after 24 hours of chilling was that it had thickened.  You can serve it cold or you could keep it in a small crockpot and serve it warm.  It was good cold, but I preferred it warm.

8 oz. pkg. cream cheese, softened
16 oz. container sour cream
11 oz. can sweet yellow and white corn, drained
15 oz. can black beans, drained and rinsed
10 oz. can diced tomatoes with green chiles, drained
1 1/2 Tbl. salsa seasoning mix (I used taco seasoning)
2 c. shredded sharp Cheddar cheese
tortilla chips


In a large bowl, mix all ingredients.  Cover; chill at least 24 hours before serving.  Serve with tortilla chips.  Serves 10-12.


Jenn's Notes: I used fat-free cream cheese, but full-fat sour cream.  I'm not sure what salsa seasoning is, so I just used taco seasoning.  This dip tasted amazing!

  8. Have you ever tried this dip replacing the sour cream with Greek yogurt? Seems like it would work. I'm a newbie with Greek yogurt, but would love to lighten things up a bit if possible.

    1. I love Greek yogurt. I have not tried it in this particular recipe, but I have combined it with salsa and it made a great dip. I totally think it would work in this recipe, it might just change the taste slightly? You could always do 1/2 yogurt and 1/2 sour cream. -Jenn

  11. Made this tonight.. I loove it! I put Extra taco seasoninh and also salsa.. I bought some thinking it called for so i said oh well.. I put about 2 or 2 1/2 tbsp of salsa.. Loved this.. Bought tortilla but thinking scoops would be better

  12. Great dip! Thanks for posting! For those who want a little more of a kick...I would add either another packet (or half) of taco seasoning, or see if there is a spicy version of the seasoning. Spicy Rotel instead of Original would be another option!

  13. They had something similar to this at Costco recently that I bought and absolutely LOVED, it disappeared so fast. I tried to go back and get another one, but was told that they wouldn't have it in stock anymore. I was so sad, until I found this, because it looks SO similar! I can't wait to try making it!

  14. I looked up Salsa Seasoning Mix and after learning what it was, I remember seeing it at Walmart. It's used in making salsa when you can tomatoes. You can find it next to the canning materials, like mason jars and such. Looking forward to making this for a snack this weekend!
